GOODNIGHT STOUT SAVORY STUFFING

GOODNIGHT STOUT SAVORY STUFFING

Ingredients

  • 1 loaf (about 1 lb) hearty bread (sourdough or rustic white - our favorite is @flourwatersaltbread if you're local), cubed and toasted
  • 4 tbsp unsalted butter
  • 1 large onion, diced
  • 3 stalks celery, diced
  • 2 cloves garlic, minced
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 tbsp fresh sage, chopped (or 1 tsp dried)
  • 1 tbsp fresh thyme, chopped (or 1 tsp dried)
  • ½ cup Captain Zig Goodnight Stout 🍺
  • 1½ cups chicken or vegetable broth (more as needed)
  • 1 egg, lightly beaten (for binding)

Optional Add-Ins

  • Cooked crumbled sausage or bacon
  • Chopped mushrooms
  • Toasted pecans or walnuts
  • Dried cranberries for a touch of sweetness

Instructions

  1. Toast the bread (if not using recommended @FlourWaterSaltBread's pre-made Stuffing Cubes):
    Preheat oven to 350°F. Spread bread cubes on a baking sheet and toast for 10–15 minutes until lightly crisp.
  2. Sauté veggies:
    In a large skillet, melt butter over medium heat.
    Add onion, celery, and garlic. Sauté until softened, about 8 minutes.
  3. Add herbs & stout:
    Stir in sage and thyme, then pour in the Goodnight Stout. Simmer for 2–3 minutes to let the alcohol cook off and the stout reduce slightly.
  4. Mix it up:
    In a large bowl, combine the toasted bread, the veggie mixture, and broth. Toss until evenly moistened (add more broth if it feels too dry).
  5. Add the egg:
    Stir in the beaten egg to help bind the stuffing.
  6. Bake:
    Transfer to a greased baking dish, cover with foil, and bake at 375°F for 25 minutes. Remove foil and bake another 15 minutes until golden and crispy on top.
